GUACAMOLE

2/3 ripe avocados,  ½ red onion finely chopped,

1/2 tomato deseeded and chopped,

small bunch coriander chopped,

1 mild red chilli chopped (optional),

juice of 1 lime, sea salt and black pepper.                                                                                        

Cut avocados into small pieces and smash half, add onion, tomato, chilli and coriander.  

Pour over lime juice and season with sea salt and pepper. Chill.
